Mass-Producing Kimchi in Korea

This video has no narration or subtitles to explain what is going on, so you may want to refer to the description of production in the Wikipedia page on Kimchi to understand what you’re seeing. I presume the fermentation magic occurs after the red glop is spread on the bok choy and the anointed cabbages packed in the plastic bags.

The facility shown is that of Seoan-dong Nonghyup Pungsan Kimchi Factory in Korea.

I was interested to see the example at the end of serving kimchi with ramen noodles. That is an “instant eats” favourite at Fourmilab, prepared in about five minutes from kimchi flavoured ramen with a packet of kimchi dumped in just before serving—yum!
